I made my little man peanut butter sweet potato protein cookies, and I think the big smile on his face, and empty plate means he liked them. Kid tested, Fix approved!

What You Need:

  • 3 medium sized sweet potatoes (Bake at 350 degrees for 30-40 minutes or until soft)
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 6 Tablespoons of natural peanut butter
  • 3/4 cup Beachbody Performance Line Vanilla Dream recovery formula * Sub ISO Pure Vanilla Protein Powder until BB Performance Line hits the shelves (Summer 2015)
  • 3 teaspoon pumpkin pie seasoning.
  1. Mix all ingredients together in in a large mixing bowl with a hand mixer or in a food processor.
  2. Scoop out a tap and mold into a small ball. Flatten slightly with a fork.  Place the cookies on a cookie sheet that has a light spray of coconut or olive oil.
  3. Bake at 350 degrees for 15 minutes.
  4. Makes approximately 24 cookies.

    Just put my cookie concoction in the oven-saw this recipe late at night & since I’m too impatient to wait & get the right ingredients figured I’d substitute w/what I had on hand-reg.peanut butter & vanilla maca protein powder. Will report my results once they finish baking! And to be fair will also post the comparison to the “correct” recipe-once I’m able to acquire those items at a normal time of day lol;)

    Made a batch tonight. 24 cookies…the recipe was right on! Though, my batter was really runny…like someone previously mentioned. How can I get the batter thicker? More protein powder? Less egg?

    But, they were still DELICIOUS!!!! Will make them again!

    My batter was runny as well and couldn’t form a ball for the cookies. I threw everything in a loaf pan and it made a sweet potato bread pudding ..was very yummy though. Maybe I didn’t put enough sweet potato in the batter to firm things up?!

    These were delicious but mine did not turn out as pretty. The dough was runny and I was unable to form a ball. Instead they resembled small pancakes. What did I do wrong?

    Are the sweet potatoes cooked before baking? Can I use vanilla shakeology?

      Yes the sweet potatoes are cooked before making the cookie dough. I wrap them in tin foil and bake at 350 degrees for about 30-40 minutes or until soft. I don’t recommend using Shakeology for this, you are not supposed to cook Shakeology as it changes the adaptogens in it.

    I’m pretty sure you cook the sweet potato first. Either steam or bake.

      Yes the potatoes need to be cooked, I bake mine. 350 degrees for 30-40 minutes. You can use another protein powder, I used to use Iso Pure until I got my hands on the BB performance line.
