Another edition of Cooking With The Calabrese Kids. Looking for a healthy, delicious Fix approved appetizer? I love this one my brother created. Scallop Ceviche. Its equal to 1/2 of a red, 1 blue (be careful how big the avocado is and how much you eat of it), 1 tsp.

Servings: 4
Time: 10 min active 15 min marinade

What You Need:

  • 2 Avocados
  • 1 C scallops (diced)
  • juice and zest of 2 limes
  • 2 T extra virgin olive oil
  • 1 T cilantro (minced)
  • 1/2 tomato (diced)
  • 1 tsp jalapeño (seeded and diced)
  • 1 tsp onion (minced)
  • pinch garlic (minced)
  • pinch paprika
  • salt to taste

What You Do:

  1. In a mixing bowl, combine all ingredients except avocado and paprika. Place in refrigerator for 15 minutes to marinate. Remove from refrigerator.
  2. Cut avocados in half lengthwise, remove pits, make 5 or six lengthwise slices through just the meat of the avocado without piercing the skin. Repeat crosswise so that you end up with diced avocado that remains in the skin.
  3. Rub the meat of each avocado with 1/2 tsp of marinade liquid. Fill the well where the pit used to be with 2 T of marinated scallops.
  4. Garnish with paprika and a sprig of cilantro and enjoy!

    This might be a dumb question but are those scallops raw? It never mentioned in the video how they were cooked or served raw. How did you cook them? And is it better to use sea scallops than bay scallops?
