This is one of my son’s favorite recipes (OK mine too 😉 ) from FixAte! It will be a perfect recipe to have in the rotation as we get closer to summer and those cravings for a cold treat come creeping! I swear once you dive into a bowl of Chunky Monkey  you’ll say goodbye to that ice cream craving, and you won’t be taking in a ton of sugar and empty calories.

It’s simple and you only need a few ingredients… enjoy!

Healthy Ice Cream, FIXATE, 21 Day Fix Approved

Chunky Monkey Ice Cream

What You Need:

3 ripe medium bananas, cut into chunks
3 Tablespoons all-natural peanut butter
Unsweetened almond milk (optional)
4 teaspoons chopped dark chocolate
4 teaspoons sliced raw almonds

What You Do:

1. Place bananas in plastic bag; freeze for 4 hours, or until onhealthy muscle relaxant completely frozen.
2. Place bananas and peanut butter in blender (or food processor); cover. Blend until smooth. Add 1 to 2 Tbsp. almond milk, if needed, for creamier texture.
3. Divide ice cream evenly between four serving bowls; top evenly with chocolate and almonds.
4. Serve immediately.

    I’ve added avocados to the bananas before so you could try just using avocados.

    So would this be something you eat after you reach your desired weight and our maintaining? I’m only allowed 2 teaspoons a day, so how would this work. Would I just divide one portion in half?

    I’d do blueberries with some vanilla whey protein powder. Skip the peanut butter. It makes a fluff.

    This looks so good! I love that there is a ‘fix’ for everything on this plan – I live in a rural area, and we have delicious homemade ice cream stands EVERYWHERE – it’s tempting, but this may tide me over.. and i love that this is counts as a purple! Thank you Autumn!
