This is one of my son’s favorite recipes (OK mine too 😉 ) from FixAte! It will be a perfect recipe to have in the rotation as we get closer to summer and those cravings for a cold treat come creeping! I swear once you dive into a bowl of Chunky Monkey you’ll say goodbye to that ice cream craving, and you won’t be taking in a ton of sugar and empty calories.
It’s simple and you only need a few ingredients… enjoy!
Chunky Monkey Ice Cream
What You Need:
3 ripe medium bananas, cut into chunks
3 Tablespoons all-natural peanut butter
Unsweetened almond milk (optional)
4 teaspoons chopped dark chocolate
4 teaspoons sliced raw almonds
What You Do:
1. Place bananas in plastic bag; freeze for 4 hours, or until onhealthy muscle relaxant completely frozen.
2. Place bananas and peanut butter in blender (or food processor); cover. Blend until smooth. Add 1 to 2 Tbsp. almond milk, if needed, for creamier texture.
3. Divide ice cream evenly between four serving bowls; top evenly with chocolate and almonds.
4. Serve immediately.
