We are in full Thanksgiving prep over at our house! My Little Man and I decided to make good use of our pumpkin seeds— they make a great light snack and can be flavored however you like! We split the seeds in half and made one batch sweet and one batch savory. Pumpkin seeds contain higher amounts of zinc than many other seeds, a mineral which is vital for enhancing memory and thinking skills. Love feeding my Little Man brain boosting foods!!
How to make them:
Preheat oven to 300 degrees F.
* Clean off all pumpkin guts from seeds.
* Place seeds in mixing bowl and drizzle lightly with coconut oil, or extra virgin olive oil.* Just enough to lightly cover the seeds
* Add seasoning. My savory seasoning: Himalayan salt, paprika and nutritional yeast. My sweet seasoning: Cinnamon, cocoa powder, coconut sugar.
* Spread pumpkin seeds in a single layer on a baking sheet.
Bake for 40 minutes- stirring occasionally until the seed are golden brown.
